352 Day Nutritional Challenge: Surf and Turf Fajitas

 

I can't decide ... are tacos or fajitas my favorites? Hmm ... well, anything that is part of the Mexican food family whets my appetite. For today though we will feature Surf and Turf Fajitas. 

I'm going to have to credit my handsome boyfriend Ryan for this dish. We love cooking together, and he too loves fajitas. He's very particular about his fajitas though. So, these fajitas have flavors from his other favorite, street tacos.  

So, let's jump right into this recipe. Once more we only use fresh food, but hot sauce is a cheat here, because it's hard to find homemade hot sauce without additives. So, don't feel like you need to go on a hunt for it. You're not likely to find any brands that meet the Challenge's requirements. 

INGREDIENTS

FRESH JUMBO SHRIMP (CHECK OUT WINCO'S SEAFOOD)

1 FRESH LEMON

4 TBSP BUTTER

1 CLOVE GARLIC

SKIRT STEAK (CHOPPED)

BLACK PEPPER

SALT

1 TSP CHILLY FLAKES 

OLIVE OIL

1 AVOCADO  

CILANTRO (PUT IN THE AMOUNT YOU LIKE)

RED ONIONS CHOPPED (PUT IN THE AMOUNT YOU LIKE)

SOUR CREAM

HOT SAUCE 

MEDIUM-SIZED TORTILLAS

AND IN THIS CASE, A DASH OF LOVE 💕

1. Cut up steak into long, thin pieces. Take a big pan, add olive oil so bottom is coated, add steak, salt and pepper to taste. I like to add a little more black pepper to it. Allow to cook until done to your liking.

2. Take butter and melt in a small pot. Add garlic and red pepper flakes. 

3. Take fresh shrimp, pour olive oil to coat the bottom of another frying pan, and add shrimp. Then take melted butter, pour over the shrimp, and let cook for 1 minute. Right before you remove shrimp, squeeze a whole fresh lemon over it. Let stand.

4. Cut up Avocado into small, thin pieces. Cut up cilantro and onions. Set aside.

5. Take tortillas and either steam or heat until crispy (your choice). 

6. Add steak and shrimp to tortilla shells. Add onions and cilantro, and top off with avocado, sour cream, and hot sauce.

And that's how you make Surf and Turf fajitas.
