352 Day Nutritional Challenge: Recipe #28 - Healthy Garlic French Fries
Healthy (or more like "healthier") French Fries are so yummy! I have no idea why sugar would ever need to be added, because fresh potatoes don't need sugar to taste good.
I made my garlic fries even healthier by adding asparagus! Yes! Ever eat garlic asparagus? It tastes absolutely wonderful with garlic fries. And here's a super secret: you can cheat and buy cut up garlic fries at Safeway! I know -- isn't that awesome! The fries are fresh, unsalted, unseasoned, and ready to go. For the rest of you who don't live near a Safeway, the recipe goes like this:
INGREDIENTS
2 WHOLE POTATOES
2 CUPS OF ASPARAGUS
1 TBSP OF MINCED OR 1 CLOVE FRESHLY CUT GARLIC
1 TSP PARSLEY
BLACK PEPPER
SALT TO TASTE
AVOCADO OIL
1. Cut up potatoes into thin slice. Do not remove skin, as the most vitamins and nutrients are found in the potato skin.
2. I prefer fresh garlic over minced. If you're not in the mood to cut up garlic into tiny pieces then go for the minced. Fresh garlic though always tastes best.
3. Generously pour avocado oil into the bottom of a wok. Turn on to medium heat and let stand for about 1 minute.
4. Take potatoes and add to oil. You should immediately hear that crackling oil sound. Stir around potatoes for 5 minutes to get them good and cooked.
5. Cut up asparagus spears and add to the potatoes. Now pour garlic and parsley flakes over the whole mix. Add salt and black pepper to taste. Let cook for 4-5 minutes and serve.
I made this dish a whole meal (it's great for vegetarians). If you want to add meat of some kind, that works too. Otherwise it's a delicious way to end the day!
